Heirloom Confetti Salsa
4 Ripe Tomatoes* Chopped
(use a red, orange, green and a white. See below),
1/4 Red Onion chopped
1 Jalapeno minced
8 Cilantro sprigs
3 Garlic Cloves minced
Juice of 1 lime
3 Tablespoons olive oil
1/2 tsp Sea Salt
Combine all of the ingredients in a large bowl. Toss thoroughly. Let stand at least 15 minutes. Longer is better.

1 1/2 cups coarsely chopped heirloom tomatoes, like 'early girl'
1 1/2 cups coarsely chopped cucumber
1 green pepper, cut into strips
1 celery stick, coarsely chopped
1 cup cubed mozzarella cheese
1/2 cup sliced ripe olives
1/4 cup sliced green olives
1 can of garbanzo beans, drained
1/2 cup zesty Italian salad dressing
1/2 cup fresh basil ripped or 1/4 tsp dried basil
Toss all ingredients gently in a large bowl and serve immediately.
*variation: Add 1/2 bag cooked color rotelli pasta and increase salad dressing to entire bottle.
